The cuisine of Valentin Herbet
My love of cooking was born at my grandmother’s stove, shaped in these warm moments of sharing, discovery and learning. I opened myself up to new inspirations in my travels around the world. I have taken in the cuisines of Ireland, Australia, Dubai, French Polynesia and Mauritius.
This passion is nourished today by the generosity of the produce of the Provençal region; it is driven by our work with the region’s producers, who are for the most part organic; and it is always driven by a deep desire to respect the life and the land that surrounds us.
In our organic-bistro style restaurant, these influences blend with home-made dishes of the day, which change with the seasons, to offer you a local gourmet experience.
This is the spirit of the restaurant at the Gardens of the Abbaye de Valsaintes.
